I actually do this all the time for work.
If you’re pulling from a decent PDF, select the text you need, then drop into Notepad if you’re running Windows, then copy and paste from Notepad into whatever word processor you’re using.
Notepad will scrub all the weird formatting shit that gets picked up from PDF and leave you with just the raw text.
Granted, you’ll still have to read through to make sure your “rn"s weren’t merged to "m"s or whatever, but at least you won’t have to deal with random font changes or italicizing.
